How To Make : Butternut Squash Soup
Make restaurant quality butternut squash soup!Peel squash and dice into small uniform pieces. The smaller the dice, the quicker it will cook. In the end we will be blending the soup so they don’t have to be the prettiest cuts. The most important thing here is that they are uniform in size so they will cook at the same rate. Toss the squash in a bit of olive oil and lay them on a lined bake sheet with cloves of garlic and fresh thyme. Dried thyme can be substituted, but fresh garlic is recommended.
Not a fan of Butternut? Use your favourite squash to make this soup. Don't like gourds? This recipe can be used for any root vegetable to make potato soup, carrot soup, or turnip soup!
