Easy Skillet Salsa Pork Chops and Rice
This one-skillet dish is so easy and filled with the delicious aroma of bubbling salsa and cheese. You’ll find this is a frequent dinner request after your family tries it.
Directions
- Season the pork chops as desired. Heat the oil in a large deep skillet over medium-high heat. Add the pork chops and cook for 5 minutes per side, or until browned and cooked through. Transfer to a plate and keep warm.
- Add the salsa, water and chili powder to pan; bring to a boil. Stir in the rice and broccoli. Cover with a lid, reduce and simmer, stirring occasionally for 5 minutes.
- Stir rice mixture and return pork chops to pan. Sprinkle with cheese. Cover and let stand 5 minutes until the liquid is absorbed and cheese is melted.
Recipe Tips
Sprinkle with chopped fresh parsley, cilantro or chopped green onions, if desired.
